Meaning bonfire in Japanese, Snow Peak has long used the term Tabiki for their iconic portable fire and grill. Now, the outdoor lifestyle brand has turned what they call “the foundational element of outdoor experiences” into a restaurant. Located in Portland at Snow Peak’s US headquarters, the new eatery aims to recreate the experience of gathering around a campfire with seasonal dishes prepared in a wood-fired oven. The Japanese-meets-Pacific Northwest menu is developed in collaboration with Submarine Hospitality and is executed by Executive Chef Alex Kim, with cocktails provided by mixologist Jim Meehan. Food is served in a minimalist 75-person dining room and includes details inspired by the brand’s products.
